Minestrone Soup

Even in summer, warm soups can be comforting. Our bouillon makes it easy to prepare the classic Minestrone soup, ensuring all the herbs and seasoning you need are perfectly balanced.
Recipe tip: This is a great recipe to use all the leftover pasta you may have. Simply smash all types of pasta and cook them directly in the soup.
What you’ll need:
2 tbsp olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 garlic cloves, minced
1 courgette, chopped
1 can chopped tomatoes
1 tin of beans (kidney or cannellini)
75g small pasta shapes
Fresh basil, chopped
How to do it:
Heat olive oil in a pan and sauté onion, carrots, and celery until soft
Add garlic, courgette, and cook for a few more minutes
Stir in tomatoes and bouillon. Bring to a boil
Add the beans and pasta, reduce the heat, and simmer until the pasta is tender
Sprinkle some fresh basil before serving
